These juicy, flavorful chicken rissoles are packed with vegetables and herbs—perfect as a snack, main course, or sandwich filler.


Ingredients:

  • 1 lb (450 g) ground chicken
  • ½ cup breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ¼ cup grated carrot
  • ¼ cup grated zucchini (squeeze out excess moisture)
  • 1 egg
  • ¼ cup chopped fresh parsley (or 1 tbsp dried)
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Olive oil, for frying

Instructions:

Step 1: Make the Mixture
In a large bowl, combine the ground chicken, breadcrumbs, onion, garlic, grated carrot, zucchini, egg, parsley, smoked paprika, salt, and pepper.
Mix just until well combined—be careful not to overmix to keep the rissoles tender.

Step 2: Shape the Rissoles
With slightly damp hands, form the mixture into small patties (about 2 inches wide).
Place them on a tray or plate as you go.

Step 3: Cook the Rissoles
Heat a skillet over medium heat and drizzle in some olive oil.
Working in batches, cook the rissoles for 4–5 minutes on each side until golden brown and cooked through (internal temperature should be 165°F or 74°C).

Step 4: Serve
Remove from the skillet and let drain on paper towels.
Serve warm with your favorite dip, inside a sandwich, or alongside a crisp salad.
