Decadent Homemade Chocolate Cake with Fudge Filling & Ganache Topping
Ingredients
For the Cake Layers:
- 1¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water or hot coffee
For the Fudge Filling:
- 1 cup semi-sweet chocolate chips
- ¾ cup heavy cream
- 1 tablespoon butter
For the Ganache Topping:
- ¾ cup heavy cream
- 1 cup semi-sweet chocolate chips
- 1 tablespoon corn syrup (optional, for added shine)
- ¾ cup mini chocolate chips (for garnish)
Instructions
To Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Beat until smooth and well combined.
- Slowly mix in the boiling water or hot coffee. The batter will be thin—this is normal.
- Divide the batter evenly between the pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely before filling and assembling.
To Make the Fudge Filling:
- Heat the cream in a saucepan until it just begins to simmer.
- Pour the hot cream over the chocolate chips and butter in a bowl. Let it sit for 2 minutes, then stir until fully melted and smooth.
- Refrigerate for 30 minutes, or until the mixture thickens to a spreadable consistency.
To Make the Ganache:
- Heat the cream until it just starts to bubble (do not boil).
- Pour the hot cream over the chocolate chips and corn syrup. Stir until smooth and glossy. Let it cool slightly before using.
To Assemble the Cake:
- Place one cake layer on a serving plate. Spread the fudge filling evenly across the top.
- Add the second cake layer on top of the filling.
- Pour the ganache over the top and gently spread it to the edges.
- Sprinkle mini chocolate chips over the ganache for decoration.
- Chill the cake for 30 minutes to allow the ganache to set before serving.
