Ingredients

For the Cake Layers:

  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water or hot coffee

For the Fudge Filling:

  • 1 cup semi-sweet chocolate chips
  • ¾ cup heavy cream
  • 1 tablespoon butter

For the Ganache Topping:

  • ¾ cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon corn syrup (optional, for added shine)
  • ¾ cup mini chocolate chips (for garnish)

Instructions

To Make the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla. Beat until smooth and well combined.
  4. Slowly mix in the boiling water or hot coffee. The batter will be thin—this is normal.
  5. Divide the batter evenly between the pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool completely before filling and assembling.

To Make the Fudge Filling:

  1. Heat the cream in a saucepan until it just begins to simmer.
  2. Pour the hot cream over the chocolate chips and butter in a bowl. Let it sit for 2 minutes, then stir until fully melted and smooth.
  3. Refrigerate for 30 minutes, or until the mixture thickens to a spreadable consistency.

To Make the Ganache:

  1. Heat the cream until it just starts to bubble (do not boil).
  2. Pour the hot cream over the chocolate chips and corn syrup. Stir until smooth and glossy. Let it cool slightly before using.

To Assemble the Cake:

  1. Place one cake layer on a serving plate. Spread the fudge filling evenly across the top.
  2. Add the second cake layer on top of the filling.
  3. Pour the ganache over the top and gently spread it to the edges.
  4. Sprinkle mini chocolate chips over the ganache for decoration.
  5. Chill the cake for 30 minutes to allow the ganache to set before serving.
