Ground Beef & Spinach Skillet with Feta

Ingredients:

  • 1 lb (450g) ground beef
  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • 1 medium onion, finely diced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley, for garnish

Instructions:

  1. Sauté the aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook for 3–4 minutes until softened and fragrant.
  2. Cook the beef: Add the ground beef, breaking it apart with a spatula. Cook for 5–7 minutes until browned. Drain any excess fat if necessary.
  3. Add spinach and spices: Stir in the chopped spinach, oregano, paprika, salt, and pepper. Cook for another 3–4 minutes, until the spinach is wilted and well combined.
  4. Add feta: Remove the skillet from heat and sprinkle the crumbled feta over the mixture, allowing it to gently melt.
  5. Garnish and serve: Top with fresh parsley and serve warm. It’s perfect with rice, couscous, or warm flatbread.
