Ground Beef & Spinach Skillet with Feta
Ingredients:
- 1 lb (450g) ground beef
- 2 cups fresh spinach, chopped
- 1 tbsp olive oil
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and freshly ground black pepper, to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions:
- Sauté the aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook for 3–4 minutes until softened and fragrant.
- Cook the beef: Add the ground beef, breaking it apart with a spatula. Cook for 5–7 minutes until browned. Drain any excess fat if necessary.
- Add spinach and spices: Stir in the chopped spinach, oregano, paprika, salt, and pepper. Cook for another 3–4 minutes, until the spinach is wilted and well combined.
- Add feta: Remove the skillet from heat and sprinkle the crumbled feta over the mixture, allowing it to gently melt.
- Garnish and serve: Top with fresh parsley and serve warm. It’s perfect with rice, couscous, or warm flatbread.
