Oatmeal Lemon Cream Bars

A delicious blend of buttery oat layers and tangy lemon cream—perfect for a refreshing treat!

Ingredients

For the Oat Crust and Crumble Topping:

  • 1¼ cups all-purpose flour
  • 1¼ cups rolled oats
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Lemon Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon lemon zest
  • ⅓ cup fresh lemon juice
  • 2 large egg yolks
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, combine the flour, oats, salt, and baking soda. Add both sugars and mix well. Stir in the melted butter and vanilla extract until the mixture is just moistened.
  3. Press half of the oat mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. Bake for 15 minutes, then remove from the oven, leaving the oven on.
  5. In a separate bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, egg yolks, and vanilla until smooth and creamy.
  6. Pour the lemon mixture over the pre-baked crust and spread evenly. Crumble the remaining oat mixture over the top.
  7. Return the dish to the oven and bake for an additional 25 minutes, or until the topping is golden brown.
  8. Let the bars cool at room temperature for 1 hour, then refrigerate for at least another hour before slicing.
  9. Store any leftovers in the refrigerator.
