Oatmeal Lemon Cream Bars
A delicious blend of buttery oat layers and tangy lemon cream—perfect for a refreshing treat!
Ingredients
For the Oat Crust and Crumble Topping:
- 1¼ cups all-purpose flour
- 1¼ cups rolled oats
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- ¾ cup unsalted butter, melted
- 1 teaspoon vanilla extract
For the Lemon Filling:
- 1 (14 oz) can sweetened condensed milk
- 1 tablespoon lemon zest
- ⅓ cup fresh lemon juice
- 2 large egg yolks
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- In a large bowl, combine the flour, oats, salt, and baking soda. Add both sugars and mix well. Stir in the melted butter and vanilla extract until the mixture is just moistened.
- Press half of the oat mixture firmly into the bottom of the prepared baking dish to form the crust.
- Bake for 15 minutes, then remove from the oven, leaving the oven on.
- In a separate bowl, whisk together the sweetened condensed milk, lemon zest, lemon juice, egg yolks, and vanilla until smooth and creamy.
- Pour the lemon mixture over the pre-baked crust and spread evenly. Crumble the remaining oat mixture over the top.
- Return the dish to the oven and bake for an additional 25 minutes, or until the topping is golden brown.
- Let the bars cool at room temperature for 1 hour, then refrigerate for at least another hour before slicing.
- Store any leftovers in the refrigerator.
