
Rhubarb Butter Recipe
Ingredients
4 cups chopped rhubarb
1 cup sugar (adjust to taste)
1/4 cup water
1 tsp vanilla extract
1/2 tsp cinnamon (optional)
1 tbsp lemon juice
Instructions
Add the rhubarb, sugar, and water to a saucepan.
Cook over medium heat for about 15–20 minutes, stirring often, until the rhubarb breaks down and becomes soft.
Blend or mash until smooth.
Stir in vanilla, cinnamon, and lemon juice.
Simmer another 10–15 minutes until thick and spreadable.
Let cool, then store in a sealed jar in the refrigerator for up to 2 weeks.

Spread on toast or biscuits
Swirl into yogurt or oatmeal
Use on pancakes or waffles
Spoon over cheesecake or ice cream
It has a sweet-tart flavor similar to apple butter, but brighter and tangier.
