Crispy Chickpea Fritters with Lemon Tahini Dip
Ingredients:
– 1 can (15 oz) chickpeas, drained and rinsed
– 1/2 small red onion, finely chopped
– 2 cloves garlic, minced
– 1/4 cup fresh parsley, chopped
– 2 tbsp all-purpose flour
– 1 tsp cumin
– 1/2 tsp coriander
– Salt and pepper to taste
– 2 tbsp olive oil
Lemon Tahini Dip:
– 1/4 cup tahini
– Juice of 1 lemon
– 2 tbsp water
– Salt to taste
Directions:
1. In a food processor, pulse the chickpeas until coarsely chopped.
2. Transfer the chickpeas to a bowl and add the red onion, garlic, parsley, flour, cumin, coriander, salt, and pepper. Mix well.
3. Form the mixture into small patties and place on a baking sheet.
4. Heat olive oil in a skillet over medium heat and cook the fritters until crispy and golden brown, about 3-4 minutes per side.
Lemon Tahini Dip:
1. In a small bowl, whisk together the tahini, lemon juice, water, and salt until smooth.
