CRISPY FRIED EGGPLANT ROLLS
Prepare ingredients:
– Eggplant
– Minced meat
– Scallions
– Chicken eggs
– Crispy fried flour
– Spices: seasoning powder, oyster sauce, pepper, salt, sugar
How to cook:
1. First, marinate the minced meat with a little seasoning powder, pepper, sugar, oyster sauce, chopped scallions and 1 chicken egg, mix well and marinate for 15 minutes.
2. Wash the eggplant with salt water and then rinse with water. Cut off both ends and slice thinly. Spread the marinated meat on top of the eggplant slices and roll them up.
3. Add 150g of crispy fried flour with 150ml of water, a little chopped scallions and 1 teaspoon of cooking oil. Stir well to thicken the mixture. Let the dough rest for 15 minutes.
4. Dip each eggplant roll into the mixed flour. Heat oil and fry each eggplant piece until golden brown, then remove and drain.
