2 tbsp flaxseeds
2 tbsp sesame seeds
1 tbsp chia seeds (optional)

1 tbsp honey or sugar

1½ cups warm water (not hot)
1 tbsp olive oil
2 tsp instant dry yeast

Mixed seeds (sunflower, pumpkin, sesame)

Activate yeast
Mix warm water, yeast, and honey. Rest 5–10 minutes until foamy.
Mix dry ingredients
In a large bowl, combine flours, oats, all seeds, and salt.
Combine
Add yeast mixture and olive oil to the dry ingredients. Stir with a spoon until a thick, sticky dough forms.
First rise
Cover and let rise in a warm place for 1 hour, until doubled.
Prepare pan
Grease a loaf pan. Transfer dough into the pan and smooth the top with wet hands. Sprinkle seeds on top.
Second rise
Let rise again for 30 minutes.
Bake
Bake at 180°C (350°F) for 45–50 minutes, until golden brown and firm.
Cool
Remove from pan and cool completely before slicing (important for clean slices).
