
Golden, crispy potatoes with garlic butter and herbs—just like the ones in your photo.
Ingredients
8–10 small/medium potatoes
3 tbsp olive oil
3 tbsp melted butter
3 cloves garlic, minced
1 tsp paprika
½ tsp salt
½ tsp black pepper
1 tsp dried Italian herbs or rosemary
2 tbsp fresh parsley, chopped
¼ cup grated Parmesan (optional)
Instructions
Heat oven to 425°F (220°C).
Wash the potatoes well. Make thin slices across each potato, about ⅛ inch (3 mm) apart, but don’t cut all the way through.
Tip: place the potato between two wooden spoons or chopsticks while slicing.
Mix melted butter, olive oil, garlic, paprika, salt, pepper, and herbs.
Brush the potatoes generously with the garlic mixture, making sure some gets between the slices.
Place on a baking tray and bake for 40–50 minutes, brushing with more butter mixture halfway through.
For extra crispiness, sprinkle with Parmesan and bake another 5–10 minutes until deeply golden.
Finish with fresh parsley and serve hot.
Air fryer: Cook at 390°F (200°C) for about 25–35 minutes, depending on potato size, brushing with the garlic mixture halfway through.
