Arroz con Leche (Rice Pudding)

1 cup long-grain white rice
4 cups whole milk
1/2 cup sugar
1 cinnamon stick
1/4 tsp ground cinnamon (for garnish)
1/4 tsp vanilla extract
1/4 tsp salt
1/2 cup raisins (optional)

π Rinse the rice under cold water to remove excess starch. Drain and set aside.
π₯ In a large saucepan, combine the rice, whole milk, sugar, cinnamon stick, and salt. Bring to a simmer over medium heat.
π½οΈ Stir frequently, making sure the rice doesnβt stick to the bottom of the pot. Cook for 25-30 minutes, until the rice is tender and the mixture has thickened to a creamy consistency.
π If using, stir in raisins during the last 5 minutes of cooking.
π― Remove the saucepan from the heat and stir in the vanilla extract.
π½οΈ Remove the cinnamon stick, then serve the arroz con leche in bowls. Sprinkle with ground cinnamon and garnish with a cinnamon stick, if desired.
π¨ Let cool to room temperature or refrigerate for a colder version.
