
Ingredients
2 large chicken breasts (about 500 g), finely diced
2 eggs
½ cup (60 g) all-purpose flour
½ cup (50 g) shredded mozzarella or cheddar cheese
¼ cup mayonnaise or Greek yogurt
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
2–3 tablespoons vegetable oil, for frying
Instructions
Finely dice the chicken into small pieces.
In a large bowl, combine the chicken, eggs, flour, cheese, mayonnaise, garlic, parsley, onion powder, paprika, salt, and pepper. Mix well.
Cover and refrigerate for 20–30 minutes to help the mixture firm up.
Heat the oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the mixture for each fritter and gently flatten.
Cook for 4–5 minutes per side, or until golden brown and the chicken is fully cooked (internal temperature 74°C / 165°F).
Drain on paper towels and serve hot.
Optional Garlic Herb Sauce
Mix together:
½ cup mayonnaise
1 tablespoon sour cream or Greek yogurt
1 clove garlic, minced
1 tablespoon chopped parsley
1 teaspoon lemon juice
Salt and pepper to taste
