Ingredients
Crust
2½ cups graham cracker crumbs
½ cup melted butter
2 tbsp sugar
½ tsp cinnamon
Cheesecake layer
8 oz (225 g) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
8 oz (225 g) Cool Whip or whipped cream
Fruit topping
2 apples, diced
2 bananas, sliced
1–1½ tsp cinnamon
2 tbsp sugar
½ cup caramel sauce
Crunch topping
1 cup crushed graham crackers
3 tbsp melted butter
2 tbsp brown sugar
½ tsp cinnamon
Instructions
Make the crust: Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press firmly into the bottom of a 9×13-inch baking dish. Chill for 15–20 minutes.
Prepare the cheesecake layer: Beat softened cream cheese, powdered sugar, and vanilla until smooth. Fold in the Cool Whip. Spread evenly over the chilled crust.
Prepare the fruit: Toss diced apples with cinnamon and sugar. Add the sliced bananas just before assembling so they don’t brown.
Layer the fruit: Spread the apples and bananas over the cheesecake layer. Drizzle generously with caramel sauce.
Make the crunch: Combine crushed graham crackers, melted butter, brown sugar, and cinnamon. Sprinkle over the caramel and fruit.
Chill: Refrigerate for at least 4 hours, preferably overnight, until firmly set.
Serve: Cut into squares and drizzle with additional caramel sauce just before serving.
