
Ingredients
For the sausage gravy
1 lb breakfast sausage
1/4 cup all-purpose flour
2 1/2–3 cups whole milk
1/2 tsp black pepper
1/4 tsp salt (adjust to taste)
Optional: pinch of cayenne or red pepper flakes
For the biscuits
1 can refrigerated biscuits
or
Homemade biscuits if preferred
Instructions
- Cook the sausage
In a skillet over medium heat, brown the sausage.
Break it into crumbles while cooking.
Do not drain all the grease — leave about 2–3 tablespoons in the pan. - Make the gravy
Sprinkle flour over the cooked sausage.
Stir constantly for about 1 minute so the flour cooks slightly.
Slowly pour in the milk while stirring.
Simmer 5–8 minutes until thick and creamy.
Add pepper, salt, and optional cayenne.
If it gets too thick, add a splash more milk. - Bake biscuits
Bake biscuits according to package directions or prepare homemade ones. - Serve
Split warm biscuits in half.
Spoon the sausage gravy generously over the top.
Tips
Use spicy breakfast sausage for extra flavor.
Fresh cracked black pepper makes a big difference.
Whole milk gives the creamiest gravy.
