
Ingredients:
1 kg beef, cut into pieces
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 slices carrots
3 potatoes, in cubes
4 cups beef broth
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1 cup frozen peas
Chopped fresh cilantro for garnish
Instructions:
Brown the meat: In a large pot, heat the oil over medium heat. Add the beef pieces and cook until browned on all sides, about 5-7 minutes
Sauté the vegetables: Add the chopped onion and garlic to the pot. Let it sauté for about 3-4 minutes, until the onion is soft and translucent.
Add the carrots and potatoes: Mix in the sliced carrots and cubed potatoes. Stir everything for a few minutes.

Slow cooking: Bring the stew to a boil. When it starts boiling, reduce the heat to low and cover the pot. Let it cook slowly for about 1.5 to 2 hours, until the meat is tender
Add the peas: About 5 minutes before serving, add the frozen peas and warm them up.
