2 ¾ cups (345 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 cup (226 g) unsalted butter, softened
1 ½ cups (300 g) granulated sugar (plus extra for rolling)
1 egg
2 teaspoons vanilla extract
¼ teaspoon salt

Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, and salt.
Cream butter & sugar: In another bowl, beat butter and 1½ cups sugar until light and fluffy (about 2–3 minutes).
Add egg & vanilla: Mix until combined.
Combine: Gradually add dry ingredients to wet ingredients. Mix until a soft dough forms.
Shape cookies:
Scoop tablespoon-sized dough balls.
Roll each ball in granulated sugar.
Place on baking sheet.
Press gently with a fork to create the ridged pattern.
Bake for 8–10 minutes, until edges are lightly golden.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

For extra sparkle, sprinkle a little more sugar on top before baking.
Don’t overbake — they should stay soft in the center.
