Directions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or foil and arrange the saltine crackers in a single layer, covering the entire sheet.
- In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, vanilla extract, and ground cinnamon. Bring to a gentle boil and cook for 3-4 minutes, stirring constantly until the mixture is thick and bubbly.
- Immediately pour the butter and sugar mixture evenly over the arranged saltine crackers, spreading it with a spatula to cover all the crackers.
- Bake in the preheated oven for 5-7 minutes, or until the mixture is bubbly and caramelized.
- Remove the baking sheet from the oven and immediately sprinkle the white chocolate chips evenly over the hot crackers. Let them sit for a few minutes to melt, then spread the melted chocolate evenly over the surface.
- Mix the granulated sugar and 1 teaspoon ground cinnamon in a small bowl. Sprinkle this cinnamon sugar mixture evenly over the melted chocolate.
- Allow the candy to cool completely at room temperature or refrigerate for quicker setting. Once set, break into pieces and serve.
