Yummy Fruit Cake
Ingredients:
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
½ cup whole milk, at room temperature
1 tablespoon lemon zest
1 cup mixed berries (blueberries, raspberries, strawberries, chopped if large)
½ cup diced pineapple
½ cup chopped kiwi
½ cup chopped mango
½ cup diced apples (peeled)
2 tablespoons all-purpose flour (for tossing fruit)
For the Citrus Glaze:
1 cup powdered sugar
2 tablespoons fresh orange juice
½ teaspoon orange zest
Directions:
Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in vanilla and lemon zest.
Gradually add the dry ingredients to the wet, alternating with milk, mixing just until incorporated.
In a medium bowl, toss all fruits with 2 tablespoons flour (this helps prevent sinking in the batter). Gently fold the fruit into the cake batter.
Pour the batter into the prepared pan, smoothing the top.
Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
Let the cake cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
For the glaze, whisk powdered sugar, orange juice, and orange zest in a bowl until smooth. Drizzle over the cooled cake.
Garnish with extra fresh berries and fruit pieces for a stunning presentation. Serve and enjoy!
