Walking Taco Casserole

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/3 cup water
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
  • 1 cup sour cream
  • 2 cups shredded cheddar or Mexican blend cheese
  • 3–4 cups Fritos or crushed Doritos (nacho or cool ranch flavor)

Optional Toppings:
Shredded lettuce, diced tomatoes, jalapeños, black olives, green onions, salsa, avocado


Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Beef:
    In a large skillet over medium heat, brown the ground beef. Drain any excess grease.
    Add the taco seasoning and water. Stir to combine and simmer for 2–3 minutes.
  3. Add the Mix-ins:
    Stir in the corn, Rotel, and sour cream. Mix thoroughly and let it simmer for another 2 minutes.
  4. Assemble the Casserole:
    Spread a layer of crushed Fritos or Doritos on the bottom of the prepared baking dish.
    Evenly pour the beef mixture over the chips.
    Sprinkle the shredded cheese on top.
  5. Bake:
    Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    Top with extra crushed chips for added crunch, then garnish with your favorite toppings like lettuce, tomatoes, jalapeños, or avocado.
