Walking Taco Casserole
Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/3 cup water
- 1 (15 oz) can corn, drained
- 1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
- 1 cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese
- 3–4 cups Fritos or crushed Doritos (nacho or cool ranch flavor)
Optional Toppings:
Shredded lettuce, diced tomatoes, jalapeños, black olives, green onions, salsa, avocado
Instructions:
- Preheat Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. - Cook the Beef:
In a large skillet over medium heat, brown the ground beef. Drain any excess grease.
Add the taco seasoning and water. Stir to combine and simmer for 2–3 minutes. - Add the Mix-ins:
Stir in the corn, Rotel, and sour cream. Mix thoroughly and let it simmer for another 2 minutes. - Assemble the Casserole:
Spread a layer of crushed Fritos or Doritos on the bottom of the prepared baking dish.
Evenly pour the beef mixture over the chips.
Sprinkle the shredded cheese on top. - Bake:
Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly. - Serve:
Top with extra crushed chips for added crunch, then garnish with your favorite toppings like lettuce, tomatoes, jalapeños, or avocado.
