🧾 Ingredients
Cake Batter:
2 eggs (room temperature)
¾ cup sugar
½ cup vegetable oil
½ cup milk
1 tsp vanilla extract
2 cups all-purpose flour
1 tbsp baking powder
Pinch of salt
1 cup fresh strawberries, chopped
Cream Cheese Swirl:
7 oz (200 g) Philadelphia cream cheese, softened
¼ cup sugar
1 egg
1 tsp vanilla extract
👩‍🍳 Instructions
Preheat oven to 340°F (170°C).
In a bowl, whisk eggs and sugar until light.
Add oil, milk, and vanilla; mix well.
Add flour, baking powder, and salt. Mix gently.
Toss strawberries with 1 tbsp flour, then fold into the batter.
🧀 Cream Cheese Mixture:
Beat cream cheese and sugar until smooth.
Add egg and vanilla, mix until combined.
🧁 Assemble:
Pour half the cake batter into loaf pans.
Add a layer of cream cheese mixture.
Top with remaining cake batter.
Swirl gently with a toothpick or knife.
Optional: add strawberry pieces on top.
🔥 Bake:
Bake for 45–55 minutes
Toothpick should come out mostly clean (a little cream cheese is fine).
❄️ Cool & Serve:
Let cool completely.
Chill 1 hour for best texture.
