Sticky Chili Maple Lamb Ribs with Fresh Lime & Cilantro

Ingredients:

2 lbs lamb ribs

1/3 cup pure maple syrup

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1–2 teaspoons chili flakes (adjust to heat preference)

Zest and juice of 1 lime

1/4 cup fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Directions:

Preheat oven to 300°F (150°C). Line a baking tray with foil and place a wire rack on top.

In a bowl, whisk together maple syrup, soy sauce, apple cider vinegar, olive oil, garlic powder, onion powder, chili flakes, lime zest, and lime juice.

Season lamb ribs with salt and pepper, then place them on the wire rack. Brush generously with half of the chili maple glaze.

Cover loosely with foil and bake for 2 to 2.5 hours, basting with more glaze every 30–40 minutes.

Uncover for the last 15–20 minutes of cooking to allow the ribs to caramelize and develop a sticky finish.

Once tender and golden, remove from oven and let rest for 10 minutes.

Garnish with chopped cilantro and a squeeze of fresh lime before serving.
