🥧 Spinach and Cheese Puff Pastry Pie

Ingredients:

  • 2 sheets puff pastry (thawed)
  • 300g (10 oz) spinach (fresh or frozen)
  • 200g (7 oz) feta cheese (crumbled)
  • 100g (3.5 oz) shredded mozzarella (optional)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • Sesame seeds (optional, for topping)
  • Olive oil (for sautéing)

Instructions:

  1. Prepare the Filling:
    • Heat a pan with a bit of olive oil. Sauté onion until translucent.
    • Add garlic and cook for 30 seconds.
    • Add spinach (if using fresh, wilt it down; if using frozen, make sure it’s thawed and squeezed dry).
    • Cook until moisture evaporates. Season with salt and pepper.
    • Let it cool, then mix with crumbled feta and mozzarella in a bowl.
  2. Assemble the Pie:
    • Preheat oven to 200°C (390°F).
    • Place one puff pastry sheet on a baking tray lined with parchment paper.
    • Spread the spinach-cheese filling evenly, leaving about 1 cm around the edges.
    • Cover with the second puff pastry sheet. Seal the edges by pressing with a fork.
    • Lightly score the top layer into square portions using a knife.
    • Brush with beaten egg and sprinkle sesame seeds on top.
  3. Bake:
    • Bake in the preheated oven for 25–30 minutes or until golden and puffy.
  4. Serve:
    • Let it cool slightly, cut along the scored lines, and enjoy!
