🥧 Spinach and Cheese Puff Pastry Pie
Ingredients:
- 2 sheets puff pastry (thawed)
- 300g (10 oz) spinach (fresh or frozen)
- 200g (7 oz) feta cheese (crumbled)
- 100g (3.5 oz) shredded mozzarella (optional)
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1 egg (for egg wash)
- Salt and pepper to taste
- Sesame seeds (optional, for topping)
- Olive oil (for sautéing)
Instructions:
- Prepare the Filling:
- Heat a pan with a bit of olive oil. Sauté onion until translucent.
- Add garlic and cook for 30 seconds.
- Add spinach (if using fresh, wilt it down; if using frozen, make sure it’s thawed and squeezed dry).
- Cook until moisture evaporates. Season with salt and pepper.
- Let it cool, then mix with crumbled feta and mozzarella in a bowl.
- Assemble the Pie:
- Preheat oven to 200°C (390°F).
- Place one puff pastry sheet on a baking tray lined with parchment paper.
- Spread the spinach-cheese filling evenly, leaving about 1 cm around the edges.
- Cover with the second puff pastry sheet. Seal the edges by pressing with a fork.
- Lightly score the top layer into square portions using a knife.
- Brush with beaten egg and sprinkle sesame seeds on top.
- Bake:
- Bake in the preheated oven for 25–30 minutes or until golden and puffy.
- Serve:
- Let it cool slightly, cut along the scored lines, and enjoy!
