Southern Fried Chicken Batter

Ingredients:

2 cups all-purpose flour

1/2 cup cornstarch (extra crunch!)

2 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (optional, for heat)

2 large eggs

1 cup buttermilk

1 tbsp hot sauce (optional)

Directions:

1. Prep your chicken: Pat dry and season lightly with salt & pepper.

2. Make the wet mix: In a bowl, whisk eggs, buttermilk, and hot sauce.

3. Mix dry coating: Combine flour, cornstarch, and all spices in a shallow bowl.

4. Double dip:

First dip chicken in the flour mix.

Then into the egg mix.

Then back into the flour mix. Press to coat well!

5. Fry:

Heat oil to 350°F (175°C)
