Savory Mashed Potato Nests with Herbed Beef Filling

These golden potato nests are crisp on the outside and creamy inside, filled with a flavorful beef and vegetable mixture. A fun twist on classic comfort food, they’re perfect for dinner or entertaining guests.

Ingredients

3 to 5 large potatoes, peeled and chopped
3 and a half tablespoons of butter
Chopped fresh dill
Salt, smoked paprika, black pepper, and oregano to taste

For the Beef Filling

500 grams (about 1.1 pounds) of ground beef
1 finely chopped onion
2 cloves of garlic, minced
1 red bell pepper, diced
1 large tomato, chopped
70 grams (about 2.5 ounces) of tomato paste
Fresh parsley, chopped

Instructions

Boil the potatoes in salted water until soft, then drain and mash them with the butter, dill, and seasonings. Let the mashed potatoes cool slightly.
Shape the mashed potatoes into small nest shapes and place them on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for about 15 minutes until lightly golden.
Meanwhile, heat a bit of oil in a skillet and sauté the chopped onion and garlic until soft and fragrant.
Add the ground beef and cook until browned. Stir in the red bell pepper and tomato, cooking until the vegetables are softened.
Add the tomato paste and mix well. Let it simmer until the mixture thickens slightly. Stir in the fresh parsley and remove from heat.
Spoon the beef filling into each potato nest and return them to the oven. Bake for an additional 10 minutes to allow the flavors to meld and the tops to crisp.
Remove from the oven and garnish with more fresh parsley. Serve warm.
