
🧾 Ingredients
For the cookies
½ cup (115 g) unsalted butter, softened
½ cup granulated sugar
¼ cup brown sugar
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
½ tsp baking powder
¼ tsp salt
Topping
Pineapple slices (fresh or canned, well drained)
Maraschino cherries (halved)
½ cup shredded coconut
2 tbsp melted butter
2 tbsp brown sugar
👩🍳 Instructions
Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
Prepare topping:
Mix shredded coconut with melted butter and brown sugar. Set aside.
Make cookie dough:
Cream butter, granulated sugar, and brown sugar until fluffy.
Add egg and vanilla, mix well.
Stir in flour, baking powder, and salt until a soft dough forms.
Assemble cookies:
Scoop dough balls and place on tray (leave space).
Flatten slightly.
Add a pineapple slice on top.
Press coconut mixture over pineapple.
Place a cherry in the center.
Bake for 12–15 minutes until edges are lightly golden.
Cool for 5 minutes, then transfer to a rack.
✨ Tips
Pat pineapple very dry to avoid soggy cookies
For extra flavor, add ½ tsp coconut extract
