No-Bake Peanut Butter Pretzel Clusters
Ingredients:
– 2 cups pretzel sticks, broken into smaller pieces
– 1 cup creamy peanut butter
– 1/2 cup powdered sugar
– 1/2 cup chocolate chips
– 1 tablespoon coconut oil (optional, for smoother chocolate)
– Sea salt, for sprinkling (optional)
Directions:
1. Begin by preparing your workspace. Line a baking sheet or a large plate with parchment paper to prevent the clusters from sticking.
2. In a large mixing bowl, combine the broken pretzel pieces and the creamy peanut butter. Use a spatula or a wooden spoon to mix until the pretzels are evenly coated with peanut butter.
3. Gradually add the powdered sugar to the peanut butter and pretzel mixture. Continue to mix until all the ingredients are well combined and the mixture is slightly sticky.
4. Using your hands, scoop out small portions of the mixture and form them into clusters, about 1 to 2 inches in size. Place each cluster onto the prepared parchment-lined baking sheet or plate, leaving some space between each cluster.
5. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave the mixture in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate.
6. Once melted, drizzle the chocolate over each pretzel cluster using a spoon or a fork. Ensure each cluster is generously coated in chocolate.
7. If desired, sprinkle a pinch of sea salt over the chocolate-covered clusters for an added flavor contrast.
8. Place the baking sheet or plate in the refrigerator for about 30 minutes, or until the chocolate has hardened.
9. Once the clusters are set, remove them from the refrigerator. Carefully peel them off the parchment paper and arrange them on a serving platter.
10. Your no-bake peanut butter pretzel clusters are now ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
