
Ingredients:
2–3 ears of corn, cut into bite-sized chunks
2 tablespoons mayonnaise
2 tablespoons sour cream or Mexican crema
1/4 cup crumbled cotija cheese (or feta as a substitute)
1 tablespoon fresh lime juice
1/2 teaspoon smoked paprika or chili powder
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon chopped fresh cilantro or parsley (for garnish)
Optional: a pinch of cayenne pepper for extra heat
Instructions:
Boil or Steam the Corn:
Cut the corn cobs into smaller chunks (about 2 inches each).
Boil or steam the corn pieces until tender (about 10–12 minutes). Drain and set aside.
Make the Sauce:
In a small bowl, mix the mayonnaise, sour cream (or crema), lime juice, garlic powder, salt, and pepper.
Stir in half of the crumbled cheese.
Toss the Corn:
While the corn is still warm, toss it gently in the creamy mixture until well-coated.
Garnish:
Sprinkle the rest of the cheese over the top.
Dust with paprika or chili powder (and cayenne, if using).
Garnish with chopped cilantro or parsley.
Serve:
Serve warm or at room temperature. Perfect as an appetizer or a party side dish.
