Yummy Potato Cheese Balls

Ingredients:

3 medium potatoes, peeled and boiled
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (plus more for coating)
2 tbsp green onions, chopped
1 egg, beaten
Salt and pepper to taste
Vegetable oil (for frying)
Preparation:

Mash the boiled potatoes in a bowl. Stir in cheddar cheese, Parmesan, breadcrumbs, green onions, salt, and pepper.
Shape the mixture into small balls, about 1-inch in size.
Dip each ball into the beaten egg, then roll in breadcrumbs to coat.
Heat vegetable oil in a pan over medium heat. Fry the potato cheese balls in batches for 2-3 minutes, or until golden brown and crispy.
Remove from the oil and drain on paper towels.
