Ingredients:
- 1 lb (450 g) ground beef (or lamb/turkey)
- 1 medium zucchini, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1 medium red onion, sliced
- 2–3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme (or Italian seasoning)
- 1/2 tsp paprika (optional)
- Salt & black pepper, to taste
- 1/4 cup fresh parsley or mint, chopped
- 1/3 cup crumbled feta cheese
- Lemon wedges, for serving
Instructions:
- Cook the beef:
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground beef, season with salt, pepper, oregano, and paprika, and cook until browned. Drain excess fat if needed. - Cook the vegetables:
Push the beef to one side of the pan. Add another tbsp of olive oil, then add the onions and garlic. Sauté for 2–3 minutes until fragrant. Add zucchini slices and cook until slightly tender. - Add tomatoes:
Stir in cherry tomatoes and cook for another 2–3 minutes until they start to soften but still hold shape. - Combine & finish:
Mix everything together in the skillet. Taste and adjust seasoning with more salt, pepper, or herbs as needed. Remove from heat. - Garnish:
Sprinkle with fresh parsley or mint and crumbled feta cheese. Serve with a squeeze of lemon.
