Ingredients

3 medium ripe bananas (mashed)

2 cups all-purpose flour

½ cup melted butter (or vegetable oil)

½ cup brown sugar

¼ cup white sugar

2 large eggs

1 tsp baking soda

½ tsp baking powder

¼ tsp salt

1 tsp vanilla extract (optional)

½ tsp nutmeg (optional but lovely)

Instructions

  1. Mash bananas: In a large bowl, mash the ripe bananas until smooth.
  2. Mix wet ingredients: Add melted butter, both sugars, eggs, and vanilla extract. Whisk until smooth.
  3. Combine dry ingredients: In a separate bowl, mix flour, baking soda, baking powder, salt, and nutmeg.
  4. Combine both: Gently fold the dry mixture into the wet ingredients until just combined (don’t overmix).
  5. Bake: Pour the batter into a greased loaf pan and bake at 175°C (350°F) for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Let it rest for 10–15 minutes before slicing.
