Homemade Chocolate Peanut Butter Bars

Ingredients:

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 1/2 cups crushed graham crackers
  • 2 cups dark chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

Instructions:

  1. In a large bowl, mix together the peanut butter and melted butter until smooth and well combined.
  2. Add the powdered sugar and crushed graham crackers. Stir until the mixture forms a thick dough.
  3. Line a baking sheet with parchment paper. Shape the dough into small rectangular bars and place them on the sheet. Freeze for 30 minutes or until firm.
  4. In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 30-second intervals, stirring after each until smooth and fully melted.
  5. Using a fork, dip each peanut butter bar into the melted chocolate, making sure it’s evenly coated. Let any excess chocolate drip off before placing the bar back on the parchment paper.
  6. Drizzle extra melted chocolate on top for decoration, if desired.
  7. Chill the bars in the refrigerator for 20 minutes, or until the chocolate is set.
  8. Serve chilled or let them come to room temperature before enjoying.
