
Ingredients:
4 boneless, skinless chicken breasts
½ cup BBQ sauce
2 tbsp honey
1 tbsp olive oil
1 lb baby potatoes, halved
3 tbsp butter
1 garlic clove, minced
½ cup heavy cream
½ cup grated Parmesan cheese
Salt and pepper to taste
Directions:
Preheat the oven to 400°F (200°C).
In a small bowl, mix BBQ sauce and honey. Coat the chicken breasts with this sauce and place them on a baking sheet.
Roast the chicken in the oven for 25-30 minutes or until fully cooked.
While the chicken is baking, heat olive oil in a pan over medium heat. Add halved potatoes, salt, and pepper. Cook, stirring occasionally, for 10-12 minutes until tender.
In a separate pan, melt butter over medium heat and sauté minced garlic until fragrant. Add heavy cream and bring to a simmer. Stir in Parmesan cheese, and cook until the sauce thickens, about 3 minutes.
Pour the creamy garlic Parmesan sauce over the cooked potatoes, and serve with the honey BBQ chicken. Enjoy!
