Ingredients:
- 1 cup mini cucumbers, sliced thin (or 1 large cucumber)
- 1 cup cherry or grape tomatoes, halved
- 1/2 cup mini sweet peppers, sliced into rings (red, orange, yellow)
- 1/2 cup bread and butter pickles or sweet pickles, sliced
- 2–3 green onions, thinly sliced
- 1–2 cloves garlic, finely minced (optional)
- 2 tbsp fresh parsley or dill, chopped (optional for garnish)
Dressing:
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar (or white vinegar)
- 1 tsp honey or sugar
- 1 tsp Dijon mustard (optional)
- Salt & black pepper, to taste
- Pinch of red pepper flakes (optional for heat)
🥣 Instructions:
- In a large bowl, combine cucumbers, cherry tomatoes, sweet peppers, pickles, green onions, and garlic.
- In a small bowl or jar, whisk together olive oil, vinegar, honey/sugar, mustard, salt, pepper, and red pepper flakes until well combined.
- Pour the dressing over the vegetables and toss gently to coat.
- Chill for 15–30 minutes to let the flavors meld.
- Garnish with chopped fresh herbs before serving (optional).
