Ingredients:

  • 1 cup mini cucumbers, sliced thin (or 1 large cucumber)
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 cup mini sweet peppers, sliced into rings (red, orange, yellow)
  • 1/2 cup bread and butter pickles or sweet pickles, sliced
  • 2–3 green onions, thinly sliced
  • 1–2 cloves garlic, finely minced (optional)
  • 2 tbsp fresh parsley or dill, chopped (optional for garnish)

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar (or white vinegar)
  • 1 tsp honey or sugar
  • 1 tsp Dijon mustard (optional)
  • Salt & black pepper, to taste
  • Pinch of red pepper flakes (optional for heat)

🥣 Instructions:

  1. In a large bowl, combine cucumbers, cherry tomatoes, sweet peppers, pickles, green onions, and garlic.
  2. In a small bowl or jar, whisk together olive oil, vinegar, honey/sugar, mustard, salt, pepper, and red pepper flakes until well combined.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. Chill for 15–30 minutes to let the flavors meld.
  5. Garnish with chopped fresh herbs before serving (optional).
