This recipe is a cherished memory from my childhood—one my mother passed down to me. She was always the go-to person for potato salad at family gatherings, and for good reason. I could honestly eat this all day!
Ingredients:
- 6 medium potatoes, peeled and diced
- 3 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 1/4 cup chopped pickles or sweet relish
- 1/4 cup finely chopped red onion
- 2 celery stalks, diced
- Salt and pepper to taste
- Paprika for garnish
Instructions:
- Place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10–12 minutes, or until tender. Drain and allow to cool.
- In a large mixing bowl, combine the cooled potatoes, chopped eggs, celery, red onion, and pickles.
- In a small bowl, whisk together the mayonnaise, mustard, salt, and pepper.
- Pour the dressing over the potato mixture and gently stir until everything is well coated.
- Taste and adjust the seasoning if needed.
- Cover and refrigerate for at least 1 hour to let the flavors blend.
- Before serving, sprinkle with paprika for that classic finishing touch.
