This recipe is a cherished memory from my childhood—one my mother passed down to me. She was always the go-to person for potato salad at family gatherings, and for good reason. I could honestly eat this all day!

Ingredients:

  • 6 medium potatoes, peeled and diced
  • 3 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1/4 cup chopped pickles or sweet relish
  • 1/4 cup finely chopped red onion
  • 2 celery stalks, diced
  • Salt and pepper to taste
  • Paprika for garnish

Instructions:

  1. Place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 10–12 minutes, or until tender. Drain and allow to cool.
  2. In a large mixing bowl, combine the cooled potatoes, chopped eggs, celery, red onion, and pickles.
  3. In a small bowl, whisk together the mayonnaise, mustard, salt, and pepper.
  4. Pour the dressing over the potato mixture and gently stir until everything is well coated.
  5. Taste and adjust the seasoning if needed.
  6. Cover and refrigerate for at least 1 hour to let the flavors blend.
  7. Before serving, sprinkle with paprika for that classic finishing touch.
