Garlic Parmesan Chicken Meatloaves

Ingredients :

  • 1.5 lbs boneless, skinless chicken breasts, ground
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • 1/4 cup milk
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Directions :

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, milk, oregano, salt, and pepper. Gently mix until just combined. Overmixing will make the meatloaves tough.
  3. Form the mixture into 4 equal-sized meatloaves. Place the meatloaves in the prepared baking dish.
  4. Drizzle with olive oil.
  5. Bake for 30-35 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the meatloaves are cooked through. Use a meat thermometer to ensure doneness.
  6. Let rest for 5 minutes before slicing and serving.
