Easy Tuna Melt Sandwiches
Ingredients:
- 4 small cans of albacore tuna, drained
- ¼ cup mayonnaise
- ¼ cup finely chopped celery
- ¼ cup finely diced red bell pepper
- ¼ cup finely chopped red onion
- 1 tablespoon Dijon mustard
- 2 tablespoons fresh chopped parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- 16 slices of whole wheat bread
- 8 slices (or more) of cheddar cheese
- ¼ cup softened butter
Instructions:
1. Prepare the Tuna Filling:
In a large bowl, mix together the tuna, mayonnaise, celery, red bell pepper, red onion, Dijon mustard, parsley, salt, and black pepper until everything is well combined.
2. Build the Sandwiches:
Place 8 slices of bread on a flat surface. Spread a generous amount of the tuna mixture on each slice.
Add one or two slices of cheddar cheese on top of the tuna mixture.
Top each sandwich with another slice of bread to close them.
3. Grill the Sandwiches:
Spread softened butter on the outside of each sandwich (on the outer sides of the bread).
Heat a skillet or griddle over medium heat. Grill the sandwiches, buttered side down, for 3–4 minutes on each side, or until the bread is golden brown and the cheese has melted.
4. Serve:
Cut the sandwiches in half and serve warm. They go great with pickles, a side salad, or a bowl of soup.
