Easy Hobo Casserole

Ingredients:

1 lb ground beef

1 small onion, chopped

2 cups frozen mixed vegetables (corn, peas, carrots)

1 can (10.5 oz) cream of mushroom soup

1/2 cup milk

2 cups shredded cheddar cheese

3 cups frozen tater tots

Salt and pepper, to taste

Optional: chopped parsley for garnish

Directions:

Preheat oven to 375°F (190°C). In a skillet over medium heat, brown the ground beef with chopped onion until fully cooked. Season with salt and pepper.

In a large bowl, combine the cooked beef mixture, frozen vegetables, cream of mushroom soup, and milk. Stir until well combined.

Transfer the mixture into a greased 9×13-inch baking dish. Top evenly with shredded cheddar cheese, then arrange tater tots on top in a single layer.

Bake uncovered for 35–40 minutes, until the tater tots are golden brown and the casserole is bubbly.

Let sit for 5 minutes before serving. Garnish with parsley if desired.
