Cheesy Spinach & Bacon Stuffed Chicken (Serves 4)

This flavorful and easy-to-make stuffed chicken dish is perfect for a hearty dinner. Tender chicken breasts are filled with a savory mix of spinach, crispy bacon, and melted cheese—guaranteed to be a family favorite!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 4 slices cooked bacon, crumbled
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions:

  1. Preheat the Oven
    Set your oven to 375°F (190°C).
  2. Prepare the Chicken
    With a sharp knife, carefully cut horizontal slits across each chicken breast—about ¾ of the way through—being careful not to cut all the way through.
  3. Make the Filling
    In a small bowl, combine the chopped spinach, crumbled bacon, and shredded cheese.
  4. Stuff the Chicken
    Gently stuff each slit with the spinach-bacon-cheese mixture.
  5. Season and Prepare to Bake
    Brush the chicken breasts with olive oil. Then, season with salt, pepper, garlic powder, and paprika.
  6. Bake
    Place the stuffed chicken breasts into a greased baking dish. Bake uncovered for 25–30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the cheese is melted and bubbly.
