Ingredients:
4 medium potatoes (starchy, like Russets)
1 small onion (optional, for flavor)
1 egg
2β3 tablespoons all-purpose flour
Salt and pepper to taste
Oil for frying (vegetable or sunflower oil)
Instructions:
1. Grate potatoes and onion (if using) using the fine or medium side of a box grater. You can also use a food processor.
2. Drain excess liquid: Place the grated mix into a clean towel or cheesecloth and squeeze out as much liquid as possible. This helps the pancakes crisp up.
3. Mix batter: In a bowl, combine the grated potato-onion mixture, egg, flour, salt, and pepper. Mix well.
4. Heat oil: Add enough oil to a skillet to coat the bottom and heat over medium-high until hot but not smoking.
5. Fry pancakes: Spoon about 2 tablespoons of the mixture into the pan per pancake and flatten with a spatula. Fry 2β3 minutes per side or until golden brown and crispy.
6. Drain and serve: Remove pancakes and place on paper towels to drain excess oil. Serve hot with sour cream or applesauce.
Tips:
For extra crunch, donβt overcrowd the pan.
You can add garlic or herbs for more flavor.
