Ingredients:

  • 2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 can (14 oz) creamed corn
  • 1 cup milk or half-and-half
  • 2 large eggs
  • 2 tbsp butter (melted)
  • 1 tbsp sugar (optional, for a sweeter flavor)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp all-purpose flour or cornstarch (for thickening)
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix)
  • ½ cup grated Parmesan (optional, for topping)

Instructions:

  1. Preheat oven to 180°C (350°F). Grease a medium-sized baking dish.
  2. Mix wet ingredients: In a large bowl, whisk together eggs, milk, melted butter, sugar, salt, and pepper.
  3. Add corn: Stir in corn kernels and creamed corn.
  4. Thicken mixture: Sprinkle in flour (or cornstarch) and mix until combined.
  5. Add cheese: Stir in 1 cup of shredded cheese into the mixture.
  6. Pour & top: Transfer mixture to the prepared baking dish. Sprinkle remaining cheese (and Parmesan, if using) evenly on top.
