Coconut Cake Recipe
Ingredients:
For the cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk or sweetened condensed milk
- 1 cup shredded coconut
For the coconut cream:
- 1 cup whipped cream
- 1/4 cup powdered sugar
- 1/2 cup shredded coconut
For decoration:
- Coconut flakes
- Sliced almonds
Instructions:
- Preheat the oven to 180°C (350°F). Grease a baking pan with butter and dust it with flour.
- In a bowl, mix together the flour, baking powder, and salt.
- In another bowl, beat the butter and sugar until light and creamy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- Gradually add the flour mixture alternately with the milk, starting and ending with the flour.
- Fold in the shredded coconut.
- Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.
To make the coconut cream:
10. Whip the cream with the powdered sugar and shredded coconut until smooth and creamy.
11. Spread the coconut cream over the cooled cake.
12. Decorate with coconut flakes and sliced almonds.
