Ingredients

2 cups grated cheese (cheddar, gouda, or mozzarella mix)

2 eggs

1 cup flour

1 teaspoon baking powder

1 small onion, finely chopped

2 tablespoons chopped parsley or cilantro

1 small garlic clove, minced (optional)

Salt & black pepper to taste

A splash of milk or water (only if the batter is too thick)

Oil for frying


Instructions

  1. In a bowl, whisk the eggs.
  2. Add cheese, onion, parsley/cilantro, garlic, salt, and pepper. Mix well.
  3. Add the flour and baking powder.
  4. Mix to form a thick batter. If it is too dry, add 1–2 tablespoons of milk or water.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil.
  7. Fry until golden brown on both sides (about 2–3 minutes per side).
  8. Remove and place on paper towels to drain excess oil.
  9. Serve hot with your favorite dip.

Tips

Add chopped olives, corn, or grated carrot for extra flavor.

For a Moroccan twist, you can add a pinch of cumin or paprika.
