Zucchini, Smoked Salmon & Goat Cheese Savory Cake πŸ˜πŸ˜‹

A delicious and easy savory loaf that’s perfect for brunch, picnics, or a light dinner. Enjoy it warm, at room temperature, or even chilled!


Ingredients (serves 8):

  • 200 g zucchini
  • 150 g all-purpose flour
  • 75 g fresh goat cheese
  • 1 packet baking powder (about 2 tsp)
  • A pinch of salt
  • 3 eggs
  • 75 mL milk
  • 4 slices smoked salmon
  • Ground black pepper, to taste
  • Fresh chives, chopped

Instructions:

  1. Preheat the oven to 180Β°C (350Β°F).
  2. Prepare the batter: In a mixing bowl, whisk together the flour, eggs, and baking powder. Add the goat cheese and milk, then mix until smooth.
  3. Prep the veggies & salmon: Wash the zucchini and cut it into small cubes. Slice the smoked salmon into thin strips. Gently fold both into the batter using a spatula.
  4. Season: Add salt, pepper, and chopped chives to taste. Pour the mixture into a greased loaf pan (you can lightly grease it using a paper towel dipped in olive oil).
  5. Bake: Place in the oven and bake for about 45 minutes, or until golden and a toothpick inserted in the center comes out clean.
