Zucchini, Smoked Salmon & Goat Cheese Savory Cake ππ
A delicious and easy savory loaf thatβs perfect for brunch, picnics, or a light dinner. Enjoy it warm, at room temperature, or even chilled!
Ingredients (serves 8):
- 200 g zucchini
- 150 g all-purpose flour
- 75 g fresh goat cheese
- 1 packet baking powder (about 2 tsp)
- A pinch of salt
- 3 eggs
- 75 mL milk
- 4 slices smoked salmon
- Ground black pepper, to taste
- Fresh chives, chopped
Instructions:
- Preheat the oven to 180Β°C (350Β°F).
- Prepare the batter: In a mixing bowl, whisk together the flour, eggs, and baking powder. Add the goat cheese and milk, then mix until smooth.
- Prep the veggies & salmon: Wash the zucchini and cut it into small cubes. Slice the smoked salmon into thin strips. Gently fold both into the batter using a spatula.
- Season: Add salt, pepper, and chopped chives to taste. Pour the mixture into a greased loaf pan (you can lightly grease it using a paper towel dipped in olive oil).
- Bake: Place in the oven and bake for about 45 minutes, or until golden and a toothpick inserted in the center comes out clean.
