Crispy wrappers stuffed with spicy buffalo chicken & gooey cheese β finger food perfection!
π Ingredients (Makes ~8 egg rolls)
For the Filling:
π Cooked chicken β 2 cups shredded (rotisserie or cooked breasts/thighs)
πΆοΈ Buffalo sauce β Β½ cup (Frankβs RedHot or your fave)
π§ Cream cheese β 4 oz (Β½ block), softened
π§ Shredded mozzarella or cheddar cheese β 1 cup
π§ Garlic powder β Β½ tsp
π§ Salt & pepper β to taste
πΏ Chopped green onions β 2 tbsp (optional)
For Assembly:
π₯ Egg roll wrappers β 8β10 sheets
π₯ Egg wash β 1 egg beaten with 1 tbsp water
π« Oil β for frying
For Serving:
π₯£ Ranch or blue cheese dressing
πΆοΈ Extra buffalo sauce
π₯ Instructions
Make the Filling
In a bowl, combine shredded chicken, buffalo sauce, softened cream cheese, shredded cheese, garlic powder, salt, pepper, and green onions. Mix well until creamy and evenly coated.
Assemble Egg Rolls
Lay one egg roll wrapper diamond-shaped on a clean surface.
Spoon about 2β3 tbsp filling near the bottom corner.
Fold bottom corner over filling, then fold in left and right sides tightly.
Roll up tightly toward the top corner, sealing the edge with egg wash.
Cook the Egg Rolls
Heat oil in a deep pan or fryer to 175Β°C (350Β°F).
Fry egg rolls in batches until golden brown and crispy, about 3β4 minutes.
Drain on paper towels.
Serve
Serve hot with ranch or blue cheese dressing and extra buffalo sauce for dipping.
