Ingredients

2 boneless, skinless chicken breasts, sliced

2 cups sliced mushrooms

3 cloves garlic, minced

2 tablespoons olive oil (or vegetable oil)

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional, for richer flavor)

1 teaspoon cornstarch mixed with 2 tablespoons water (slurry, for thickening)

1 teaspoon freshly ground black pepper (adjust to taste)

Salt, to taste

Green onions for garnish (optional)


Instructions

  1. Prepare Chicken: Slice the chicken breasts into bite-sized pieces. Season lightly with salt and black pepper.
  2. Cook Chicken: Heat 1 tablespoon oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through (about 5–6 minutes). Remove from pan and set aside.
  3. Sauté Mushrooms & Garlic: In the same pan, add the remaining oil. Sauté garlic for about 30 seconds until fragrant. Add mushrooms and cook until tender and browned (about 4–5 minutes).
  4. Make Sauce: Add soy sauce, oyster sauce (if using), and freshly ground black pepper. Stir well.
  5. Combine: Return the chicken to the skillet. Mix everything together. Add the cornstarch slurry to thicken the sauce (optional). Cook another 2 minutes until glossy.
  6. Serve: Garnish with chopped green onions if desired. Serve hot with steamed rice or noodles.
