Shrimp and Spinach Stuffed Pasta Rolls

Ingredients:

– 12-14 lasagna sheets

– 1 pound cooked shrimp, chopped

– 2 cups fresh spinach

– 1 cup ricotta cheese

– 1 cup shredded mozzarella

– 1/4 cup grated Parmesan

– Creamy Roasted Red Pepper Sauce (recipe below)

Creamy Roasted Red Pepper Sauce:

– 1 jar (12 oz) roasted red peppers, drained

– 1/2 cup heavy cream

– 1 tablespoon olive oil

– 1/2 teaspoon smoked paprika (optional)

– Salt and pepper, to taste

– Fresh basil, for garnish (optional)

Instructions:

1. *Prepare filling:* Mix cooked shrimp, spinach, ricotta cheese, mozzarella, and Parmesan.

2. *Assemble rolls:* Spread filling on lasagna sheets, roll up, and place seam-side down.

3. *Make sauce:* Blend roasted red peppers, heavy cream, olive oil, smoked paprika, salt, and pepper.

4. *Bake:* Top pasta rolls with sauce and mozzarella cheese. Bake until golden.
