
Ingredients (makes 12 rolls):
For the Apple Filling:
- 3 medium apples (Granny Smith, Honeycrisp, or your favorite), peeled & diced small
- 2 tbsp butter
- ¼ cup brown sugar (or white sugar)
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 1 tsp lemon juice (to balance sweetness & prevent browning)
- 1 tsp cornstarch mixed with 1 tbsp water (slurry, to thicken)
For the Rolls:
- 12 egg roll wrappers (spring roll wrappers also work)
- 1 egg (beaten, for sealing)
- Oil, for frying (vegetable or canola)
For Serving (optional):
- Powdered sugar, for dusting
- Caramel sauce or vanilla ice cream for dipping
Instructions:
1. Make the Apple Filling
- In a skillet, melt butter over medium heat.
- Add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook 5–7 minutes until apples soften and juices release.
- Stir in cornstarch slurry and cook 1–2 minutes until mixture thickens.
- Remove from heat and let cool slightly.
2. Fill the Egg Rolls
- Place one wrapper on a clean surface, with a corner facing you (diamond shape).
- Spoon 2 tbsp of apple filling near the bottom corner.
- Fold the bottom corner over the filling, fold in the sides, then roll tightly.
- Brush the top corner with beaten egg to seal.
- Repeat with remaining wrappers and filling.
3. Fry the Egg Rolls
- Heat oil in a deep pan to 350°F (175°C).
- Fry rolls in batches for 2–3 minutes per side until golden and crispy.
- Drain on paper towels.
4. Serve
- Dust with powdered sugar.
- Serve warm with caramel dipping sauce, whipped cream, or vanilla ice cream.
🌀 Air Fryer / Oven Option:
- Air Fryer: Spray rolls with oil and air fry at 375°F (190°C) for 8–10 minutes, turning halfway.
- Oven: Place rolls on a baking sheet, brush with melted butter, and bake at 400°F (200°C) for 15–18 minutes until golden.
