Broccoli Cheddar Soup

Ingredients
2 tbsp butter
1 small onion (chopped)
2 cloves garlic (minced)
2 tbsp flour
2 cups milk
2 cups chicken or vegetable broth
2 cups broccoli florets (chopped small)
1 cup carrots (grated or finely chopped)
2 cups cheddar cheese (shredded)
Salt & black pepper (to taste)
Optional: pinch of paprika or nutmeg
👩‍🍳 Instructions
Sauté base:
Melt butter in a pot over medium heat. Add onion and cook until soft (3–4 minutes). Add garlic and cook 30 seconds.
Make it creamy:
Stir in flour and cook for 1 minute. Slowly whisk in milk and broth until smooth.
Add veggies:
Add broccoli and carrots. Simmer for 10–15 minutes until tender.
Blend (optional):
For a smoother soup, blend part of it and return to the pot.
Add cheese:
Lower heat and stir in cheddar until melted and creamy.
Season & serve:
Add salt, pepper, and optional spices. Serve hot.
🔥 Tips
Use sharp cheddar for stronger flavor
Don’t boil after adding cheese (it can become grainy)
Great with toasted bread or in a bread bowl
