Pineapple Chicken Foil Packets

📝 Ingredients:
2 chicken breasts
1 cup pineapple chunks (fresh or canned)
1 zucchini (sliced)
1 red bell pepper (sliced)
2 tablespoons soy sauce
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic (minced)
Salt & black pepper (to taste)
1 teaspoon paprika (optional)
Chopped green onions (for garnish)
Aluminum foil
👩‍🍳 Instructions:
Preheat oven to 200°C (400°F).
Prepare sauce:
In a bowl, mix soy sauce, honey, olive oil, garlic, salt, pepper, and paprika.
Assemble packets:
Place each chicken breast on a piece of foil
Add zucchini and bell peppers around it
Top with pineapple chunks
Add sauce:
Pour the sauce evenly over each chicken piece.
Seal foil:
Fold the foil tightly to create sealed packets.
Bake:
Place packets on a baking tray and bake for 25–30 minutes until chicken is cooked through.
Serve:
Carefully open packets (steam is hot!), garnish with green onions, and enjoy.
💡 Tips:
You can cook this on a grill instead of the oven
Add chili flakes if you like it spicy 🌶️
Serve with rice or noodles
