8 large eggs
½ cup mayonnaise
1 teaspoon yellow mustard
2 tablespoons finely chopped green onions
2 tablespoons finely grated carrot (optional, for color & slight sweetness)

Salt and black pepper to taste
½ teaspoon paprika (optional)

Boil the eggs:
Place eggs in a pot and cover with water. Bring to a boil, then turn off heat, cover, and let sit for 10–12 minutes.
Cool & peel:
Transfer eggs to ice water for 5 minutes. Peel and pat dry.
Chop the eggs:
Chop into small pieces (or mash slightly if you prefer creamier texture).
Mix:
In a bowl, combine mayonnaise, mustard, salt, pepper, and paprika.
Fold in eggs, green onions, carrot, and parsley.
Chill:
Refrigerate for at least 30 minutes before serving for best flavor.
