Meatloaf
500 g ground beef (or beef + lamb)
1 egg
½ cup breadcrumbs
½ small onion, finely chopped
2 cloves garlic, minced
2 tbsp milk
1 tbsp ketchup
1 tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp Italian seasoning (optional)
Cheese Filling
Mozzarella or cheddar cheese (cubed or shredded)
Topping
Extra cheddar cheese slices or shredded
Melted butter (optional)
👩🍳 Instructions
Preheat oven to 180°C (350°F). Grease a muffin tin.
In a bowl, mix all meatloaf ingredients until well combined.
Press meat mixture into muffin cups, making a small well in the center.
Add cheese in the middle, then cover with more meat mixture.
Top each muffin with cheddar cheese.
Bake for 25–30 minutes until cooked through and golden.
Brush tops with a little melted butter (optional) and rest 5 minutes before serving.
